BBQ Cauliflower Wraps
Looking for a lunch idea that could be delicious cold or warm? Well, then you should definitely try this wrap. It has the perfect balance between the creamy texture of the butternut and the crunch of the lettuce and pumpkin seeds. This wrap will leave you feeling satisfied and fueled to finish your day at work or school.
The flavours of the wrap compliment each other so nicely. The sweetness of the BBQ sauce is balanced by the tangy "ranch" sauce, perfect for if you're not into too much sweetness in a dish. I have tried the wrap with tomatoes, as well as butternut, in my opinion, they are both great. The tomato adds more freshness, where the butternut adds more creaminess and gives the wrap a hearty feel. If you try other combos please let me know!
- 1/4 of a head of Cauliflower
- Woolworths Smokey BBQ sauce
- 1 tsp rosemary
- 1 cup roasted cubed Butternut or tomato
- 2 Tbsp Mayo
- 1 tsp Mustard
- 1 tsp Sage
- 1 tsp Lemon juice
- Water
- Lettuce (or any other greens)
- Wraps
- Pumpkin seeds
Method:
1. Preheat the oven to 220 degrees Celsius
2. Cut the cauliflower into pieces that are bite-size. Place them in a bowl and add the BBQ sauce and rosemary, mix well until all the cauliflower is covered.
3. Place the marinated cauliflower on a baking tray lined with paper. Place the tray in the oven for about 20 mins, or until you can poke a knife through the cauliflower.
4. To make the tangy "ranch" sauce, add the mayo, mustard, sage, lemon juice and enough water to thin out the sauce to drizzle.
5. Assemble the wraps with the cauliflower, sauce, and whatever other ingredients you desire.
