Creamy Mushroom Pasta
On this day I was having an invention day in the kitchen, where I made and tried a whole bunch of recipes. The sauce I made was actually for a pie filling. I'm telling you this because as a student I find that meal prepping is quite important, especially if you don't have a lot of time to cook during the week. Also if you have a small fridge and can't keep a lot of different ingredients in it, then it is nice to know how to use what you have in a bunch of ways. So, when you make food try and see if maybe you can use the sauce for something else, or the veggies in a different dish, this helps minimize wastage.
What's really nice about this recipe is that it has super cheap ingredients and it takes a really short amount of time to cook! Perfect meal for when you're in a rush or really don't feel like cooking.
Please remember that the type of spices and their amounts are dependent on your taste, these are just what I used. Please let me know if you have added anything else to this dish, I would love to try it out. Enjoy!
Ingredients:
- 1 diced onion
- 2 cloves of garlic
- 2-3 cups of chopped mixed mushrooms- 250ml Orley whip imitation cream*
- 100g of pasta of your choice
Spices (optional): salt, pepper, mixed herbs
Method:
1. Bring a pot of water to the boil and cook your pasta according to the package.
2. Cook the onions and garlic in either a bit of oil or water on medium heat, cook them until translucent.
3. Add the mushrooms and cook that for about 5 minutes.
4. Add the cream and spices, cook for another 5 minutes so the sauce can thicken and get the flavours.
5. Add the pasta to the sauce, stir well and serve.
* Orley whip can be found in most Pick n Pay, Spar, Checkers, and Shoprite stores.
