Shroom Roll



If you are looking for a quick, yummy and filling breakfast then keep reading!

 Being a university student I do not have too much time in the morning because you know, sleep. So when I make a meal I tend to make a little more so that I have for another meal. The mushroom mixture and leftover beans can be kept in the fridge for a few days, therefore more sleep for another day.
Ingredients:
- 2 cups of chopped mushrooms (mixed mushrooms for best result)
- 2 chopped shallots ( or half an onion)
- 1 Tbsp crushed garlic
- Handful of rocket
- 1 tin of baked beans
- Any type of roll (I used a Kaiser roll)

Method:
Cook the shallots for about 2 minutes, add the garlic and mushrooms then cook until soft. I seasoned the mushroom mixture with salt, pepper and seasoning mix from Woolworths. Heat up the beans in the microwave. Cut the roll and assemble the sandwich by placing the rocket on the bottom, laying the mushrooms down with the beans placed on top.
