Nana Bread

This banana bread is definitely a winner! It had my moms vote and she is not usually keen on dishes with cinnamon. The aroma of the bananas, cinnamon, and nuts baking is just heart warming and mouth drooling. This loaf has such great elements, the sponge is nice and soft but then the top is so crunchy, best of both worlds.


Ingredients:
- 5 medium sized overripe bananas
- 225g plain cake flour
- 3 heaped tsp baking powder
- Pinch of salt
- 100g brown sugar
- 3 tsp cinnamon
- 75g vegetable oil
- 1 1/2 cups chopped nuts or fruit (I used walnuts and pecans) + additional for toppings (optional)

Method:
1. Pre-heat oven to 200 degrees Celcius.
2. Mash the peeled bananas and then, mix well with the oil and sugar.
3. Add the flour, baking powder, salt and cinnamon to the wet mixture, and combine well.
4. Add the chopped nuts or dried fruit to the mixture and stir in well. Top the loaf with a layer of chopped nuts (optional).
5. Bake in a greased loaf tin ( medium size as it rises) for 50 minutes.
6. Allow to cool before slicing.
