Sweet Potato & Black Bean Pita Pockets
This recipe is great for if you're looking for a lunch to take to school, university or work. It is even great for any leftover veggie patties you have laying around. Let's just say it is an all-round delicious recipe, and you have to try it!
Sweet potatoes are great for you, they are loaded with tons of vitamins and minerals.
Vitamin D: helps with our energy levels and moods.
Vitamin C: helps with our immune system and produces collagen, which helps reduce ageing by keeping the elasticity of the skin.
Magnesium: helps keep us relaxed and stress-free.
There are many more benefits for including sweet potatoes into your diet, these are just some of them.
This recipe has all the macronutrients you need for each meal, carbs, fats, and proteins. The carbs are essential to fuel our day, our bodies use carbohydrates to make glucose, which is our main source of energy (thanks Biochem 244). Carbs are good for you! It all depends on whether they are refined or not. Refined carbs have many of the nutrients leached out of them while being processed, whereas, unrefined still contains all the important goodies for our bodies. Fats must be included in the diet also as a source of energy. Fats also help us absorb nutrients better and support cell growth. It is very important that we get enough protein to support all the wear and tear we do on our tissues. The protein we ingest helps to build and repair certain tissues. It is very important that we try and eat a balanced diet to the best of our ability. This doesn't mean that you have to each macronutrient in equal proportions, but rather in proportion to each other.
These pita pockets consist of my Sweet Potato and Black Bean burger patties, the pink sauce at the end of that recipe, spinach and pita bread. I used one patty for one pita bread and stuffed with a handful of spinach into the pocket. You could always add some tomato or avo, or anything that your heart desires really. Go wild and enjoy it!
