Vegan Pancakes
Almost every time I ask my boyfriend if he wants flapjacks for breakfast, I would by mistake say, "Do you want pancakes?". He would always get so excited and then I would have to correct myself. He would always seem a bit disappointed. So, I had to finally give in to his request for pancakes... I don't know why I had never tried making vegan pancakes before, but I'm glad I did! They did not disappoint.
My mom has always taught me that the batter should always be thin to give a nice light pancake. Having a thinner batter will also help to get a bit of crunch on the sides, if that's your thing. I love it when my pancakes have some colour to them!
Now let's talk toppings; I mean anything goes really. I love a classic cinnamon sugar and squeeze of lemon for some freshness. You could cook some berries to make a berry compote. Jason even stuffed one with an easter egg. There are so many savoury options too. Do whatever floats your boat, as long as it makes your heart happy.
This recipe makes about 7- 9 pancakes, depending on how big your pan is and how thick you want the pancakes. This also includes a cheeky first test pancake taster, because of course, that is a thing!
Ingredients:
- 1 cup Flour
- 1 Tbsp Sugar ( I used coconut sugar, it gave a slight toffee taste)
- 2 Tbsp Baking powder- 1/8 tsp Salt
- 1 cup Plant milk (I used Soymilk)
- 2 Tbsp Vegetable oil
- 1/4 cup Water (might not use it all)
- A dash of Vanilla essence (optional) - If you want a savoury pancake, then do not include.
Method:
1. Add all the dry ingredients in a bowl and mix it.
2. In a jug add the milk, oil, and vanilla essence, mix well.
3. Slowly add the wet mixture to the dry and whisk together. This is to avoid any lumps, if you can't get rid of the lumps, then use an electric mixer.
4. Once you have a nice batter, slowly thin the batter out with water. Add a tablespoon of water at a time, to ensure you don't make it too thin. The batter should be silky smooth and just thicker than the consistency of milk.
5. Once you are happy with the consistency, spoon some batter into a pan over medium heat. I used a soup ladle to spoon out the mixture.
6. Once you see some bubbles forming and the sides start to lift, flip the pancake over and cook for a few minutes.
7. Add your fillings/toppings and enjoy!
