'Chicken' Salad with a Creamy Lemon Salad Dressing



I have been craving a vegan 'chicken' salad, but just haven't been able to pair a salad dressing with it, until now. I was actually so shocked by how well it actually came out for something I just winged. 


The dressing is super creamy, which can be thinned out with a touch of water if that is what you prefer. It has a great lemon flavour, which is why I love it. Since the dressing contains Avos and Olive oil, it provides some good fats that contain Omega 6 and 9.

Ingredients

For the salad:
- A salad base of your quantity and your preffered ingredients (I included: lettuce, cucumber, tomatoes, and spring onions)

For the salad dressing: (makes enough for 3-4 salads)
- 1 large Avo
- 1/4 cup Olive oil
- 1 Tbsp Dijon mustard
- The juice of 1 lemon 
- 1 Tbsp Apple cider vinegar
- 1 tsp Garlic powder
- Salt 
- Pepper

Method:
1. Cook the patty and allow it to cool completely before combining it with the salad ingredients.
2. Chop all your salad ingredients and place in a bowl.
3. Place all the salad dressing ingredients into a food processor or a blender, and blend until smooth.
4. Adjust the flavours to your liking by adding more salt, pepper, lemon juice and water.
5. Cut your patty and combined it with the salad and dressing, and ENJOY!
