Shroom Sandwich
I've been meaning to post this recipe for a really long time, but every time I make it I literally can't wait to eat it so I forget to take a photo. (oops, sorry not sorry) This sandwich is a winner in our house, my boyfriend really enjoys it. It's super easy, super quick and super delicious! If you throw some gherkins on there, it tastes so much like a Maccie D's burger.
You can make a few and keep them in a Tupperware in the fridge to be reheated or eaten cold. I wouldn't keep them for longer than 3 days though, just to be safe.
Here is the recipe to make 4 mushrooms, which can fit on either 2-4 sandwiches depending on whether you like your sandwiches stacked or not.
- 4 Brown mushrooms
- 1 tin of Tomato paste
- 1 Tbsp Garlic
- Your kind of squeeze of sriracha (optional)
- 1 tsp dried Basil
- A good crack of salt and pepper
Method:
1. Preheat your oven to 200 degrees on the grill setting.
2. Place all the ingredients, besides the mushrooms, in a bowl and mix together.
3. Spread the mixture onto the underneath side of the mushrooms.
4. Place the mushrooms top side down, so the tomato paste is exposed, on a baking dish or tray.
5. Drizzle a bit of olive oil over the mushrooms.
6. Grill it for 10 minutes, until the mushroom is soft.
7. Build your sandwich! You can either slice the mushrooms into strips or leave it whole, your choice.
I love to put Bwell mayo, sliced tomato, spinach and gherkins on my sandwich, but feel free to do you boo!
