3 Pepper Pasta Salad


I have been meaning to make this pasta salad since I last had it at my Dad and stepmom's house. It was part of their leftovers from the night before, so for lunch, I had that and a salad. It is very yummy and refreshing, perfect to take with to a braai for everyone, vegans or non-vegans, to enjoy. I adapted my stepmom's recipe slightly by adding in beans for extra texture and protein. I'm sure you can add some peas or corn, as I paired this the other night with steamed sweet corn and spinach, and it was delish! Ingredients:

- 500g noodles
- 1 Onion chopped
- 1 Red bell pepper
- 1 Orange bell pepper
- 1 Yellow bell pepper
- 1 can Butter beans 
- 1 can Cannelloni beans

Sauce:

- 1 cup Tomato sauce
- 1/2 cup Oil
- 1/2 cup Vinegar 
- 1/2 cup Sugar 
- Black pepper to taste
- 15 ml Curry powder

Method:

1. Cook pasta as per instructions on the packaging.
2. Chop all the vegetables finely.
3. Mix together the sauce ingredients in a bowl.
4. In a big bowl add the cooked pasta, all the chopped vegetables, rinsed beans, and sauce. Mix well until all the noodles and vegetables are covered in sauce.
