Baked Crumbed Tofu


I don't know if I had cook goggles on or if I have just been vegan for too long because to me these really reminded me of chicken nuggets. Well at the very least they are a very good alternative to the store bought fake meats because they have fewer preservatives and you get the satisfaction of making something super yummy and impressive. I would say that's enough reason to give this recipe a go. 



I tried to make these as part of my meal prep on a Sunday for the rest of the week and... Although they weren't bad by any means when reheated in the oven, they were certainly a tad more delicious when made fresh. So if you do make them as part of your meal prep, or you make them and you have left over, do not fret, you are definitely able to reheat them in the oven until they go all crispy again!

I really enjoyed these with either tomato sauce or my pink sauce that is in my Sweet Potato and Black Bean burger recipe, but my boyfriend really enjoyed them with the sweet chili sauce. You do you Boo. 



I think I made around 16 pieces, I bought pre-cut thin squares of tofu that was 1cm thick, 6cm long and 6cm wide, I just cut my squares in half. So if you are cutting a block of tofu you may get more or fewer sticks. 
Ingredients:

- 500g Tofu
- 1/2 cup Flour 
- 1/2 tsp Garlic powder 
- 1 tsp Sugar 
- 1/2 tsp Cayenne pepper
- 1/2 tsp Tumeric
- 1 tsp Salt 
- 7 Tbsp Water
- 1 cup Corn Flakes and 1 cup Rice Krispies ( you can either do both or double up on one of them, you may need more as you go on but start with 1 cup each)

Method:

1. Preheat the oven to 220 degrees Celsius and line a baking tray with baking paper.
2. Cut the tofu into pieces of roughly 1cm thickness, 3cm in width and 6cm in length. The most important thing is that they aren't too thick and that they are pretty much uniform sizes.
3. Make the batter by mixing together the flour, garlic powder, sugar, cayenne pepper, turmeric, salt, and water.
4. Crush the Corn Flakes and Rice Krispies into smaller pieces, so that it can stick to the tofu, and place in a shallow dish.
5. Place the tofu in the batter and make sure it is covered, then transfer it to either cereal and cover it evenly.
6. Place them on the baking tray and bake for 15 minutes on each side, or until they are golden brown and crispy.
7. Once you have taken them out, let them cool for about 5 minutes, just so that they do not scorch your mouth. Serve them while they are still warm and fresh with any sauces of your choice. Enjoy!
