Vegan Chocolate Chip Cookies
This recipe was adapted from my traditional family chocolate chip recipe, just to make it vegan friendly. Some people think it's so difficult to be vegan when it comes to trying recipes. I think they are just forgetting to go back to what they know and try tweaking it a bit. These cookies came out just as well as what they did before. Making a few substitutions didn't hurt anyone ;)
These cookies are perfect for you to try if you like your cookies slightly crunchy on the outside and nice and soft, but not cakey, on the inside! The only bad thing about these is that it will leave you very conflicted about being a good person and sharing them with others, or to get lost in indulgence and keeping them a secret for yourself. We don't judge here! You can always just keep a small stash for yourself. They really are that good that you could possibly eat them all in one day.
Ingredients:
- 1 cup White sugar
- 1/2 cup Brown sugar
- 1 cup Vegan butter ( I used Ole)
- 2 Flax eggs ( 2 Tbsp Flax meal + 6 Tbsp water)
- A pinch of salt
- 1 tsp Vanilla essence
- 2 1/2 cups Flour
- 1 tsp Baking powder
- 1/2 cup Flaked almonds (optional)
- Chocolate chips ( amount: as much as your heart desires)
Method:
1. Preheat your oven to 180 degrees Celsius and line a baking tray with greased baking paper.
2. Prepare your flax eggs.
3. Cream together the sugars and butter.
4. Mix in flax eggs, salt and vanilla into the mixture. The mixture may look a bit funny, almost curdled, don't worry it will turn out just fine, just keep baking! :)
5. Sift the flour and baking powder into the wet mixture, and mix well.
6. Add in the nuts and chocolate chips, and incorporate well.
7. I like to use an ice cream scoop to scoop out the dough onto the tray, or you could scoop out 1-2 tablespoons of dough and form balls. The ice cream scooper is just easier as it already forms the balls.
8. Bake for about 12 minutes, depending on how crunchy or soft you would like them. I usually bake them until they start to go a bit golden brown.
9. Allow them to cool on a wire rack, and then enjoy!
