Apple & Blueberry Buckwheat Flapjacks
It all started when I was in my local Pick n Pay and saw Orgran buckwheat pancake premixes on sale. I had never tried buckwheat, so I was so excited to find it AND that it was on sale! Heck yeah for sales man! My first time trying this premix was, uhm, not good. It was my fault as I just followed the instructions on the back of the box and I could smell it was not going to be sweet. Yet, I carried on and cooked them without adding anything extra. The pancakes had a very funny taste, it was not sweet at all! No amount of syrup or sweet toppings was going to help. I was not ready to give up yet!
After some thought on how to improve the taste, I started to think about flavours. My usual banana and peanut butter didn't sound good enough because I didn't know how the premix would react with placing a banana in it and, I really wanted the batter to be sweeter. Maybe I will actually try it and let you know! Then I thought about adding grated apple like in my last Apple Cinnamon flapjack recipe. Then I thought blueberries would go nicely too because it goes so well in my oats! And that is how this creation was made.
I must say that the batter is impressive, it creates very fluffy and light flapjacks. It's just the taste that is a bit funky. This mixture makes a lot of flapjacks but you can always place the extras in a freezer bag and put them in the freezer for future mornings. You can then just pop them in the toaster and enjoy!
- 1 box of Orgran buckwheat pancakes premix
- 1 apple grated
- 1 tsp vanilla essence
- A dash of cinnamon
- Fresh or frozen blueberries
- 2 flax eggs (2 tbsp flax flour + 6 tbsp water)
- plant milk
Toppings:
- caramelised apples (explained down below)
- sunflower seeds
- pumpkin seeds
- coconut cream
Method:
1. Make the flapjacks according to the back of the box by adding in the flax egg, milk and water. Mix until everything is well combined.
2. Add in the vanilla, cinnamon, grated apple, and blueberries in. Fold in until everything is well combined.
3. Place the desired amount on a pan that is on medium heat. Wait for bubbles to form and then flip.
4. Continue until all the batter is used up.
5. Top with desired toppings and enjoy!
Caramelised apples:
I put caramelised apples on top. You just heat about a tsp of coconut oil or a dash of water in a pot. Add in a chopped apple, a tbsp of coconut sugar and a dash of cinnamon. Cook the apples down until they are soft but still have a bit of crunch.
