Tomato & Aubergine Pasta
My boyfriend's mom gave me some aubergines because she bought a few (a lot) too many at Food Lover's. I was excited to get creative with them because it's not something I usually buy.
I thought I would make a pasta, a nice, fresh tomato pasta. I really wanted to add some protein, then I thought about adding a type of legume, but that would take away from the fresh aspect of the sauce. Then I remembered that I had bought a Pulse Pasta! This was perfect because I could still get my protein in, just in a different form. I bought the Pulse Pasta from Pick n Pay and it contains SO much protein, which makes it super filling! This pasta also has more fibre than regular pasta, and it has fewer carbs than regular pasta.
Ingredients:
- 2 small aubergines diced
- 1/2 onion diced
- 2 tbsp garlic
- 1 green pepper diced
- 2 tins of chopped tomato
- 2 tbsp tomato sauce
- 1 - 1 1/2 cup mushrooms (optional)
- 1 tsp basil
- salt & pepper
Method:
1. Fry the onion and garlic in either some oil or water until fragrant.
2. Add the green pepper, aubergine and mushrooms until the mushrooms have cooked down.
3. Add in the tinned tomatoes and the tomato sauce.
4. Add in the seasonings and allow it to cook for a little while, so it can reduce.
5. Add to your pasta and enjoy!
