Healthy Tomato & Herb Pasta Sauce

Sometimes you just crave pasta and if you're trying to be healthy, you might want to add some veggies. Adding whole veggies isn't always the most appetizing, it can sometimes kill your vibe. This recipe allows you to indulge in the pasta but also sneak in the veggies, without even tasting them, for those extra nutrients. 


This recipe is great for moms with fussy kids or just for people who hate veggies in general. You can add more or less of any veggie, it's up to you and your taste buds. 
I paired the sauce with my homemade sweet potato gnocchi and it was delicious! 
This recipe makes enough sauce for 3-4 servings.

Ingredients:

- 1 chopped Onion
- 1 Tbsp crushed Garlic
- 1 cup shredded Carrot
- 2 chopped Courgettes/Baby marrows
- 1 cup Cauliflower (steamed)
- 1 cup Broccoli (steamed)
- 1 tin of Tomatoes
- 1 sachet of Tomato paste
- 1 cup Spinach
- 1 tsp Basil
- A dash of Origanum
- A dash of Chili Spice

Method: 

1. Add the chopped onion to a pan with some oil and fry off until it becomes translucent and fragrant.
2. Add your garlic, carrots and courgette. Fry these off for a few minutes.
3. Add the tinned tomatoes and tomato paste, mixed with the veggies.
4. Season it with the herbs and chilli.
5. Then pop the sauce into a blender with the broccoli, cauliflower and spinach.
6. Blend until nice and smooth, add some water if you see that the sauce is too thick.
7. Place the sauce back into the saucepan to heat up and add some final seasonings of salt, pepper and more herbs if necessary.
8. Enjoy!
