Sweet Potato Gnocchi


While on a date at The Woodlands Eatery (highly recommend btw) I had sweet potato gnocchi. I fell in love with it. After the date, I said to Jason that I had to recreate it, and so I did. I did a bit of research and kind of mushed a few recipes together. 


This recipe is super easy and delicious! It only has 3 ingredients. I must warn you, it is quite messy but in a fun way. 


The amount of flour in this recipe was based on intuition and feel. I would recommend you start off with less and just keep adding as you go on. 



Preferably the sweet potatoes should be baked to draw out extra moisture, a tip I got from my aunt.

Serves 2-3 people, depending if you love gnocchi or not. If you're like me, its probably 2 servings.

Ingredients:

- 2 large or 4 small Sweet Potato
- 2 cups Flour (may need extra ) gluten free can also be used
- 1 tsp Salt

Method: 

1. Bake the sweet potatoes in an oven at 200 degrees Celsius until they are able to be pierced with a fork. Allow them to cool down - until you can handle them.
2. Mash the sweet potatoes in a bowl until it is smooth.
3. Place 2 cups of flour on a work surface, make a well in the centre.
4. Add the mashed potato into the well and start working the flour into the mash, until fully combined. You don't want the dough to be too sticky, therefore keep adding flour bit by bit until it comes together.
5. Once you are happy with the consistency of the dough, you can roll it into a ball. Cut into 8 even pieces.
6. Take an eighth and roll it into a log, roughly 2,5cm thick. Then with a sharp knife, cut pieces that are about as thick as your thumb. After each log is cut, roughly toss the pieces in a bit of flour to ensure they are dry and do not have sticky edges. Continue this process until all the dough has been cut.
7. The gnocchi can be stored in the fridge for 3 days or frozen for a few weeks. Preferably, you should cook it straight away. When packing the gnocchi, lay them down in a single layer so that they do not stick to each other.

Cooking the gnocchi:

1. Heat a pot of water until it is at a boil. Add the gnocchi to the water and allow it to cook for a few minutes. They will be done when they rise to the top, collect them out the water with a slotted spoon.
2. Optional but HIGHLY recommended: Heat a pan with some olive oil and fry the boiled gnocchi until they are golden brown on the sides.
3. Toss the gnocchi in any pasta sauce and enjoy!
