Hearty Veggie Soup


I made an Instagram story on making this soup and asked if you guys wanted the recipe. I had a big response and you guys wanted the recipe, so here it is. 


This soup is so delicious and hearty, great for a cold winters day or night. It is packed with veggies which is always great for you. 

Ingredients:

- 1 chopped Onion
- 2 chopped Leeks (optional)
- 1 Tbsp Garlic
- 1-2 chopped Celery sticks
- 1-2 chopped or grated Carrots
- 1/4 head shredded Cabbage
- 1-2 Tbsp Ina Paarman's Vegetable Stock Powder
- 1/2 - 1 Tbsp Ina Paarman's Roast Onion Soup & Gravy Powder
- 1 litre Water
- 1 tin of Chopped Tomatoes
- 1 tin of Beans (any type, I used a 4 bean mix)
- 1 cup Frozen Peas
- 1-2 handfuls of Baby Spinach
- 1 Tbsp powdered Turmeric (optional)
- 1 tsp Oregano
- 1 tsp Sweet Basil
- 1 tsp Sage
- A dash of Cayenne pepper
- Salt
- Pepper

Method:

1. Fry off the onion in a bit of oil or water, until it starts to brown and become fragrant.
2. Then add the garlic, leek, carrot, and cabbage. Fry these off until the cabbage has reduced a bit in size.
3. Add in the tin of tomatoes.
4. Place both powdered stocks into 500ml of boiling water and give a bit of a stir. Add the 500ml stock water to the pot and mix into the veggies, after that add the other 500ml.
5. Add the beans and frozen peas.
6. Add all the spices and seasonings to your taste and stir well into the soup. 
7. Allow this to sit for a couple of hours or 30 mins minimum.
8. Just before serving, add the spinach and allow it to wilt a bit.
