Fajita Bowl


It has been a hot minute since I've posted a savoury recipe, and an even hotter minute since I've posted a Meat-free Monday meal idea. Alas, here we are and I promise this is one you will want to try!

I have recently had to cut out tomato from my diet, just for a short while. This had me stressed out since the majority of my meals had a tomato base. I then got onto Pinterest and was looking at meal ideas and saw this.

This meal is such a wholesome well-balanced meal. It contains fat from the avo. Protein from the 'chicken' strips (optional), rice, quinoa and beans. The combo of the rice and beans create a complete protein, which is great news for us vegans! This meal will keep you full and satisfied!


This meal is great for meal prep since most of the elements can be batch cooked and kept in the fridge. 
I would suggest to cook the 'meat' on the night and add the avo on the night too. This prevents the meat from going soggy, I prefer mine to be crispy, and prevents the avo from going brown. 


Ingredients:

- 1 Onion
- 2-3 Sweet peppers (any colours)
- 3-4 big Brown mushrooms
- 1 tin Black beans
- 1-2 Tbsp Garlic
- Fajita spice mix (store-bought or home-made*)
- Fry's 'chicken' or 'beef' strips (found in the frozen section of any PnP or Checkers)
- Brown rice and quinoa (or just one)
- Avo

*fajita mix:
1 tsp cayenne pepper or chili powder
1 tsp paprika powder
1 tsp garlic powder
1 tsp cumin
1/2 tsp oregano
A good crack of salt and pepper

Method:

1. Slice up the onion, peppers, and mushrooms.
2. Place the onion in a pan over medium heat with either some oil or water, cook them until they start to brown.
3. Add the peppers, mushrooms and garlic, and allow this mixture to reduce and get a bit soft (not too soft that it turns to mush).
4. Add the fajita spice mix (as much as you'd like) and add the beans. You could add the cooked 'chicken' for it to soak up the seasoning but I like mine to be crispy so I keep it separate until plating.
5. Plate the veggies with the rice, chicken and avo. Now it's time to enjoy!
