Vegan Brownies


Vegan Brownies!! This was a highly requested recipe from my Instagram feed, so guys, here it is! They have 5g of protein and are also oil-free. 


These brownies are super fudgy in the middle and have a slightly crisp top. My favourite kind of texture for a brownie! 

I used Spelt flour because it has a few more benefits than regular cake flour. It is lower in gluten and slightly higher in other nutrients, like protein and minerals. 


This batter makes about 9 brownies - and not the insy tiny ones - like this is a good sized brownie.

Ingredients: 

- 2 Flax eggs ( 2 Tbsp Flax flour + 6 Tbsp water)
- 1/2 cup Apple sauce
- 1/4 - 1/2 cup Coconut or white sugar (You can use either, the coconut sugar gives it a caramel flavour. The amounts vary depending on how decadent you would like them.)
- 1/4 - 1/2 cup Brown sugar (Depends on how sweet you want them)
- 1 tsp Vanilla essence
- 1/2 cup Chocolate protein powder (I used Wazoogles, this is optional. If you dont have protein powder just use 3/4 cup Cocoa powder)
- 1/4 cup Cocoa Powder
- 3/4 cup Flour (I used Spelt Flour - from Wellness Warehouse)
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 1 tsp Baking powder
- 1/4 cup Dairy-free Chocolate chips
- 2 blocks of Lindt 85% Dark chocolate (optional, it just adds depth to the flavour)
- 1/8 cup chopped nuts (optional but I used hazelnuts)

Method:

1. Make the Flax egg by mixing the flax flour and water, let this sit until it gets sticky.
2. Preheat the oven to 180 degrees Celsius and line a baking tray with baking paper. I used a square tray that was 20cm wide and 4cm deep.
3. Add the applesauce, sugars, vanilla essence and the flax egg, and whisk until well combined.
4. Add the flour, protein powder, cocoa powder, baking soda, salt, baking powder, and mix together with a spatula. The mixture should not be runny, it should be quite thick.
5. Incorporate the chocolate chips and nuts.
6. Place mixture into the lined tray and flatten out. Add extra chocolate chips and nuts to the top and pop it in the oven for 15-20 minutes. 15 minutes will give you a fudgy brownie but 20 minutes will give you a moist brownie with a slightly crisp top.
7. Enjoy!
