Fluffy Vegan Waffles


Searching for that sweet treat that is simply delicious and easy to make? Well search no further, these waffles are perfect for either dessert or as a Sweet Treat Sunday idea. I often switch up my Sunday breakfasts between these waffles and my Flapjack recipe. 


I have played around with a few recipes and I must say that this one is definitely a winner! It is so light and airy so it does not leave you feeling sickly full when you have finished eating it. The light batter is also good if you like your waffles slightly undercooked, it is still nice and soft but without being unevenly cooked. Or for those of you who are like me and like it crispy, this recipe makes the best crispy waffles! 

I usually like to top my waffles with maple syrup and sometimes some chocolate chips, but toppings are very personal, so go mad! I'm sure these would be great with berry sauces, or even good old fashioned chocolate sauce. 



Makes around 4-5 waffles, depending on the size.

Ingredients:

- 1 1/2 cups Flour
- 1 1/2 Tbsp Baking powder
- 1/8 tsp Salt
- 3 Tbsp sugar
- 3 Tbsp Lemon juice
- 1 1/2 Tsp Vanilla Essence 
- 3 Tbsp Canola oil
- 1 Cup water

Method:

1. Preheat waffle iron.
2. Whisk all the dry ingredients together.
3. Add the lemon juice, vanilla essence, oil, and water. Let the batter sit for about 5 minutes or so, while it rises.
4. Spoon batter into iron and cook according to the instructions of your waffle iron.
