Greek-styled Chickpeas
I really felt like eating some olives, not that I even like olives but I felt like a dish with tomatoes and olives. So I bought some green olives and stood in my kitchen and just started adding bits of this and bits of that together, and voila! I must say for it being a weird creation, it is pretty damn good!
Once I had made this dish I had no idea what to call it because I made it so randomly. So I did what anyone would do, phone mom for help. She was pretty much just as stumped as I was but we came to a name "Greek-styled Chickpeas".
I suggest serving this dish with some rice, or quinoa rice mix.
- 1 can of Chickpeas
- 1 can of diced Tomatoes
- 1 tin/sachet of Tomato Paste
- 1 diced red onion
- 2 Tbsp Garlic
- 2 cups of Spinach
- 1/4 cup chopped Green Olives
- 1 cup chopped Mushrooms
- 1 Tbsp Apple cider vinegar
- 1 Tbsp Tomato sauce (ketchup)
- Seasoning: 1 tsp Sugar, 1 tsp Oregano, 1 tsp sage, salt, and pepper.
Method:
1. Fry the onion and garlic in some water or oil until fragrant.
2. Add the mushrooms and allow them to get soft.
3. Add the tinned tomatoes, tomato paste, vinegar, tomato sauce, chickpeas, and olives. Fill the tomato tin with water and add to the dish.
4. Add the seasoning and incorporate everything well and allow to cook for around a minimum of 10-15 minutes. The longer any tomato based dish cooks, the better.
5. Add the Spinach and allow to wilt 5 minutes before serving,
